Pork Butt and Beef Ribs

Did a cook last weekend for birthday celebrations.  Since I ran out of time (to catch a flight) I had to end the butt at an IT of 175.  It actually pulled a little at the money muscle side and sliced nicely (like a roast) for the rest. It was really tasty and was as good as regular pulled pork.  I will try this sometime again just for a change.  The beef ribs were done on the PK Grill and could have used another hour but just did not have it.

Looks very good SPS! I agree about sliced butt. Anymore about every third or fourth butt gets cooked to an IT around 165F, chilled, sliced, and vac packed for later. Great for cold sandwiches and my favorite,  hot pork plate, a hot sandwich with mashed potatoes and gravy.
