Hard to believe that it was 77° in February. We planned to cook outside as soon as we knew it was coming. Seems like all that Margo wants anymore is Smash Burgers and Handcut Fries!

I love them myself! LOL





We cooked a chicken in the Kettle earlier in the day week.
Yesterday I was on the lawn m for the first time this year.
The groundhog knows nothing.
We're enjoying the early Spring.  Cars are turning yellow already.

This is so true. Anything cooked outside would have been great!

High temp smokes can be done on most cookers. A pit barrel cooker is a great cooker but you can high heat cook on a Weber, any kamado , any pellet grill & many offsets

That looks SOOO good!!  I have gravitated to making gravlax the past several years.  My wife would eat that everyday, if I didn't hide it from her.  We both love lox and gravlax.

BTW.  Check out Tenthunter's Cider Mill Brine.  Do a search here.  Cliff posted his recipe.  He has made ham and bacon using this recipe.  I tried it when I was making gravlax.  Once his wife got a taste of the Cider Mill Brine Gravlax, he had to hide the sample I gave him from his wife.
