More Brisket than I Needed

Brisket (choice) was on sale for $1.69 so I had to buy one.  I had to use the pellet grill since I needed to start overnight and let my son tend the cooker since I had errands to run in the morning.  I asked the butcher if they had any small ones, and was brought out a cart with everything but one over 10 pounds.  One was marked at 7 pounds, but was told "pretty sure this one is weighed wrong."  I grabbed it knowing it was too big.  When I got home and weighed it... 11.5 pounds!  Win for me, but I still had to cook it.  I trimmed the heck out of it and then split the flat and point.  When the flat finished I started resting it and put the point in.  The point came out a few hours later after already having some flat.  More resting, more brisket and lots of leftovers.

Your pellet grill sure puts ones heck of a smoke ring on that brisket.

Not sure if I've ever had an issue with too much brisket. That looks great and what a great price. I can't find any around here under 5-6 dollars per/lb

More brisket than you needed????  Hmm - just sounds like an opportunity for AWESOME leftovers and a big pot of brisket chili.  Nice looking brisket - great color

We have been eating leftovers for two days.  No stopping.  All just served the same way it was originally.  No tacos, chili, etc.
