Well it is finally starting to look like spring may come around here.

Had the chance to sneak a couple cooks in --

Last night made boston butt:
In the pit:


About to wrap:

Pulled this morning:



Then this morning snuck in a high heat session for some chicken breasts and a steak
Used Stubbs all natural briquettes for this one:

So I've been experimenting with pulled meats (chicken and chuck roasts). Is the ideal method to pull them after 200-210F IT and then wrap them in foil and set in the cooler over night? I've seen this mentioned a couple of times now. The chicken doesn't really put up a fight when I pull out the meat claws immediately after cooking...but the chuckies sometimes give me a bit of a fight even after resting in foil for 30 min after cooking to 210F IT. Suggestions?

But I am sure there are plenty of people here that will be able to give some great advice.

From what I have read on the board here, the chuck roasts can be finicky and the best test is to try to swirl a fork in the roast and if it twists like spaghetti it is ready to be pulled.  As I said, I have never done one yet, so YMMV.

Hadn't come across that bit about "swirling a fork like spaghetti" but none of my chuckies have been close to that tender! Maybe I'm doing something wrong...time for more delicious experimentation!  8)
