Hi, my name is KC-Q and I'm addicted to BBQ

This is a little late, but I thought I'd share the BBQ's of the weekend (there's 3).

#1 - Full Packer Brisket - kosher salt, smoked salish salt, pepper - 11hr cook time.








#2 - Smoked Salmon - kosher salt, pepper, paprika - 2hr cook time





#3  - Beef ribs and pulled chicken - steak and kabob rub from a middle east bakery on the ribs with hot sauce as the binder, 1 chicken got PBC pit rub and the other Memphis Dust recipe from (amazingribs.com) - ribs 5 hr cook time, chicken 2.5 hr cook time





Unfortunately, I didn't get any plating pics - was too busy eating!

Busy weekend!

It all looks good, but my favorite is the salmon - great color. Did you brine them?
You can't catch a fish if you don't get a line wet...

Nope.  Just sprinkled them with salt, pepper, and smoked paprika before putting them on.  It's a great recipe on amazingribs.com. set them on a bed of romaine w/ Italian dressing and parmesean cheese.  That's it!  Quick and easy!

I've just done it for a quicker cook, more surface area for seasoning and portion control.

The salmon we usually get is wild caught and partially cut down to the skin to make the fillet 4-5 individual servings
