Christmas Season Kickoff--Lamb, Duckling, and Prime Rib

Tonight I had the first of three PBC cooks. Rack of lamb was on the menu.

All seasoned with Beef & Game:


A few of the ribs sliced apart:



Sorry they aren't arranged all pretty.

Friday I do the duck, using the turkey hanger.

Saturday I do the prime rib. Pix to come.

BTW, the lamb was outstanding.  That Beef & Game seasoning is perfect for it.

I liked the duck; Mrs. Zak did not--too fatty for her.

So the lamb was great, the duck was good......but the prime rib was just fantastic.

No before shot.  I mixed up crushed garlic and McCormack Montreal Steak with olive oil and coated the meat.

I hung it in the PBC with the bones still tied on.



My neighbor and I are going in on an 8-rib hunk-o-meat some time this week.  He was soooooo jealous when I sent him the pic.
