Giving a pork butt a go

First time ever attempting a pork butt on a pbc, can't wait to see how it turns out.  It's a balming 27 degrees here in Minneapolis and the 9lb butt is on the cooker as of 9:45am.

Here's a pic of the butt from last night before putting the rub on.


Here she is on the cooker.



Starting food temp is 55
Starting was around 300

Off to go paint the babies room and check back in a few hours.

The butt is still cooking away...

To answer a couple questions.  I tied it up a bit only because of the size and the fact there were loose portions that I felt could have eventually pulled themselves free.  I also decided to wrap this time and try without on the next.

Added a little bourbon barrel cherry stout for a little wrapping juice.

Results were awesome, absolutely loved it.  Gonna try it without wrapping next time with a smaller butt.

Used reg kingsford and 2 chunks of apple wood.

Start time
Pork @ 55 degrees
Pbc @ 300

4hrs 45 min later (pork taken in for wrapping)
Pork @ 160
Pbc @ 265

--- @ 8hrs I added 15 more coals (the high here was 37 and it was really windy)

9hrs 15min total cook time
Pork @ 203
Pbc 225

Rested for 30 min







And bourbon for desert.

Looks great! I am amazed at how much faster the PBC cooks things in relation to my other cookers. I must admit that I do like butts to cook for a loooooong time, they become more tender in my opinion. I have done one butt and it was for those Cubanos that I made and it was mighty tasty though ;)

The PBC delivers for sure, Caj.....you need to get you one!
