Wrapping
« Reply #-1 on: April 13, 2016, 01:55:52 PM »
Any of you guys ever use the crutch with ribs on the PBC? I saw a video of the BBQ Pit Boys doing it and wondered how it does. My ribs come out very tasty but almost seem to be a little leathery in places by the time they are done and tender on the outsid .

I've done it but don't prefer it. I've never hit a stall on ribs to where I needed it nor have they not been tender enough without wrapping that I need to wrap. They come out plenty tender IMO and I prefer the bark without wrapping to the bark from wrapping. To me it gives the meat more of a "steamed" taste to me when wrapped.
