Drunken Irish Rib Sandwich

Drunken Irish Rib Sandwich—Whole Rack Of Pork Baby-back Ribs Slow Smoked With Apple Wood In Our Special Kamado Oven And Basted With Our Top Secret Irish Whiskey BBQ Sauce.  Served Whole & Boneless On A Freshly Baked Toasted Loaf.   Comes With A Side of Fire Roasted Specially Seasoned Potato Wedges Pan Grilled With Irish Kerrygold Butter.  Sliced & Served On Individual Cast Iron Plates.  (Serves 4-6)
These were given a light coating of Bad Byron’s Butt Rub primarily for the salt.  On the keg for 3 hours for smoke, then wrapped with a mixture of Honey, Jameson Irish Whiskey, Guinness & Tiger Sauce for a couple of hours.  Back on the keg to finish for an hour or so until tender.  Bones gently pulled and removed to leave the slab whole.
