Christmas Prime Rib and leftovers

Cooked our prime rib on the pellet grill for Christmas dinner.  It was 6.78 pounds. Started at 180 degrees then finished at 225. Took it off when IT hit 133 degrees. I let it rest for 20 mins and then seared on the Weber Summit.  Total cook time was right at 4 hours. I ran the leftovers through the meat slicer for French dip sandwiches tonight and lunch meat for a couple days.

Cooked perfectly and I betcha those French dip sammies are going to be good.
