Sorry to be away but I have been looking for a day job and another maybe to be named blessing. But I digress

We decided to go for it and tossed them menu Options. 5-6 Meat choices and same amount of Sides. Note: Sides I would offer to 100 or even 400 go out the window when the number gets to 3,000. Example Potato Salad for 400 requires 17 Dozen Hard Boiled Eggs. Nuff said. lol

Here are a couple of my meat Crunching numbers. These are to make Servings of the Meats for 3,000 people

Pulled Pork
3000 - 1/4lb Sammys is 750lbs Cooked Pork
= about 1,500lbs Raw [20 Whole Hogs! lol ]
200lbs Raw in [1] of my cookers for 10-12 hours
Would take 7.5 Cooker Runs

BBQ Chicken - Thighs, Drums and Breast Quarters
3,000 pieces
150 Pieces in a Cooker for 3-4 hours
20 Cooker Runs

Pulled Chicken
750lbs Cooked
142 - 7lbs Birds
30 per Cooker for 3-4 hurs
4.7 Cooker Runs

Sausage Brats
3,000
225 Per Cooker for 2 Hours
13.3 Cooker Runs

we have [3] Peoria Custom Cookers I can put all in the same place and make multiple Runs.

Just thought I would share a little number crunching. Numbers would change depending on Multiple Meats and so on.
I'm not a celebrity Pit Boss but I play one in NASCAR.
