What are YOU making for the Super Bowl?
« Reply #-1 on: February 03, 2012, 11:13:23 PM »
I am doing a slightly smoked/roasted Cuban Boston butt suffed with cloves of garlic, pulled and served on tortillas with the fruit salsa I described in an earlier thread.

Smoked trout dip, fresh tomato based salsa, gucamole, smoked sausage shot-glasses ( Thanks Old Dave!), and ABT's my way (sliced length-wise into boats, cream cheese, Lil Smokies, wrapped in bacon and blackberry/jalapeno/balsamic finishing sauce.

Guests are bringing the guac, smoked chicken wings, and desserts.

Now - come on - tease us with your menu! ;D

Hey, T2, your menu for the Super Bowl sounds delicious. I'm sure my invitation probably got lost in the mail. Wish I could be there with you to eat all that good food, but I have all ready accepted an invitation to a party called the Super Bowl. Well, maybe not an invitation, but rather a demand to appear (you gotta show up to get paid). There will be a whole lot of people there (maybe 75,000 or so) and all I will probably get to eat is a hot dog or two and some nachos...if I'm lucky.

Keeping it simple -- ribs!  Gotta deliver 4 racks plus some fixins to some folks as a prize I donated to a charity auction back in the fall so I'm tossing in an extra rack for "personal use".  Thinking about some wings, too but I haven't bought them yet.

Since I can't really cook right now, I think we are just getting some kind of takeout.  I have to keep my right arm in a sling until at least the 13th.  This part of my recovery is the most difficult.  As soon as I can cook, I will!

Cooked all day yesterday.  Made T's Cuban pork butt with mango salsa, Chicago Italian beef sandwiches, ribs, wings, deviled ham puffs, smoked salmon mold, and many interesting finger foods.

When I crock potted the beef, I added onion, red/yellow sweet peppers, Greek peppers and lots of garlic to the pot.  Base was from Louie's Au jus seasoning. Got Amarosa rolls from Phili for the beef.  Yummy!  Phil
