Going to dust off the Big Easy and have a question or two.

Chicken was in a brine for 6 hours and now it is drying in the outside fridge.


It has been so long since I used The Big Easy I forgot how long to roast a chicken per pound so help please?

Art,
I believe poultry is 10 minutes a pound.  At least that's what I did with the turkey breast I did yesterday.  It was pretty close, I think I only had to a few extra minutes to get it to IT 165.

Art it should take about ten mins per pound.   Start looking at temp 30 mins in depending on size of bird it will take about 50 mins to hit 165

Got to run at the doctors office waiting to get another round of shots.    Good luck can't wait to see it when I get back home

Sweetie says "The Big Easy roasts the best chicken of all our cooking devices" and I believe she is right.
Now time to see how it does after sitting for a year or two.

Hopefully it turned out great.  I have yet to bother with chickens since I have been doing pulled pork.

One thing I was told by TMB a while ago - go by internal temp, not time.  My latest cook proved that.  8.5 lb pork shoulder in the TBE - usually at the 2 1/2 hr mark it is dark brown/ black on the outside.  This time, it was no where near black and I was tempted to skip using the foil.  Common sense prevailed.  At 5 hours, I was at 220 in the foil.  Turned out the best pulled pork I have done (at least the wife says so!). 

The reasoning behind the drastic difference - it was 40 degrees out and spitting rain all day.  With the mist in the air and cool temps, it cooked slower than normal but the meat never burned.  Overall time was still faster than I expected for the size.

I decided to use the Pit Barrel Cooker Turkey hanger and it works perfect.  Sweetie said "It is the easiest to clean of any I used before".




Old TBE stills works fine.  Initially the TBE temperature was 540 degrees and I turned it down to hold between 350 and 375 degrees. 
I will say this, if you turn down the gas on TBE you must keep watch because it is possible to go out especially in windy conditions.  Char-Broil recommends only maximum gas flow for the TBE.

Anyway my main point is the Pit Barrel Cooker Turkey Hanger works better than anything I have use since the original The Big Easy came out.

I like that hanger..   My first Big Easy was either on or off there was no adjustment, also mine believe it or not was 18,000 BTU,s where the second production was turned down to 16,000 BTU's

Same with my first one, about a hundred years ago, but this one puts out enough heat so I am fine with that. :)

My old hanger I have been using since my original The Big Easy through a SRG, BEESR and now another TBE.


For those who do not have the Pit Barrel Cooker with Turkey Hanger this is what it looks like. Just out of the dish washer.

i do hang them and cook in the basket.  With my mod butt basket it's easy to remove and very easy with a hanger.   As for cooking I'd say it the same as far as results

The big advantage is cleanup. 
The basket to me is a pain to clean up and Sweetie wants no part of it.   It also will rust after awhile.
The PBC Hanger it is the easiest to clean and use of any methods I have used or seen.

When I had a TBE, I bought an extra basket. One basket I cut the bottom off so it was much easier to clean. Also that bottom was saved to be used as another shelf. There are so many tips and tricks to use whatever is available to make life easier! As Art knows any way to make clean up easier is the best way to go! :thumbup:
