Dino Ribs on the Weber Kettle

Ribs took a total of 6 hours. 4 hours unwrapped and 2 hours wrapped. I let them rest for an
hour before slicing. The SnS maintained temperatures between 265 and 275 for the 6 hour
cook. Ribs were super delicious and worth every penny I paid for them.  Since this rack was a
little over 4 pounds after I trimmed the fat, 1 rib was plentiful enough for the two of us! Going
to have some great leftovers!

You are getting so good at these videos.  When you say dry brine overnight with salt what does that mean?. Do you rinse the salt off?
