I trimmed up a pork belly tonight snd put it in the dry cure to rest.

There were a couple of thin pieces of pork attached to the top of the pork belly but were separated from it by a gnarly membrane. I cut them off and peeled the membrane until they were clean and lean. It yielded what I would call cutlet looking pieces that were about 1/2 inch thick. I seasoned them up with fresh ground black pepper and some salt. Sprinkled a little garlic powder on them and brushed with olive oil. Threw them on the Weber gasser for just a couple minutes and they were outstanding. Tender and juicy. I am not sure if it was part if the belly or an adjacent cut of meat. Either way I wish I could buy just that cut because it was so good. Anyone have any thoughts on what cut it was?
