Can you do two pork shoulders at the same time in TBE?
« Reply #-1 on: August 16, 2017, 10:50:40 AM »
I have a group at work (12-15) and I want to make sure I have enough pulled pork.  Is one 8# shoulder enough, or should I do two smaller ones?

Thanks,
Cappy

About 1/2 pound per person should be OK.  With a couple sides you'll be good.   We usually cook some Conecuh sausage as well. It will fill any gaps. If you don't have Conecuh just get your favorite and do a pound or two.  I like to hand it out a little early as an app.
There is no reason why you can't do two if thats what you prefer.  They should  cook a little faster that way and if your people have huge appetites there will be a little extra
for them and maybe a little to take home. .

Thanks, we will have coleslaw and potato salad.  I might just try two smaller shoulders.

If they eat like me, you might need two. :D :D
After cooking you will end up with maybe six lbs. or so???
Then if you have more than you need to feed the hoards, you get to eat all the leftovers.

I prefer butts myself, less hassel with bones (for me anyways)  When I figure pork I go by 1/4 lb pre person with 2 or 3 sides and buns. This has always worked out for me.  I would cook a 10 lb butt which when finished you should have just a little over 8 lbs of pulled pork which ='s 30 to 32 people (with buns)

Now, if serving plate style 1/2 lb per person is closer est..     Or, you could cook two 6 lb butts and have 10 + lbs of meat

Tim has much better luck than I do.  I routinely only get 50% of my pre-cooked weight in final pulled pork.

In fact, I just did two boneless Butts this past weekend for a dinner for out of town family.  Pre-cooked was a smidge over 16 lbs.  Final product was about 7½ lbs.

There were about a dozen diners, some big eaters, some not.  We also had BBQ Beans, Mac-n-Cheese, and a Broccoli Salad.  We did have leftovers.
