Tonight’s cook is beef back ribs. I am using the Weber kettle, with the slow n sear, drip n griddle and the new 22” Two-Zone
Cooking Grate with EasySpin (https://abcbarbecue.com/product/22-cooking-grate/). This is the latest product from Adrenaline Barbecue Company. It is scheduled to be released to
the general public on October 13th. I got mine early as I am an email subscriber. One of the things I like most about this is the
removable hinged grate. It is 304 stainless steel and the opening where the hinge sits is wider than the normal Weber grates.
I am using KBB with 2 chunks of post oak and a chunk of cherry.

1 hour into the cook and the ribs are starting to get some nice color. I am sitting right at 250 degrees grill temperature.

4 hours total and the ribs are done. My temperatures stayed consistent between 246 and 250 the entire cook. I did not wrap, but
I did spritz the ribs a couple times with a 50/50 mixture of apple cider vinegar and water.

My plate with some boxed pasta salad that my wife doctored up with some black beans and corn. Delicious meal!
