Oops - I should have thought this one out

Had some Three Alarm Pepper Cheese and red pepper cheddar cheese sitting in my fridge begging to be smoked.  Decided to use try out my Vortex pellet tray rather than the Big Kahuna.

Removed the drip pan, loaded up the pellets, placed the Vortex on top of the deflector with the cheese position right over top - DUH!  Never thought about the heat coming up from the tray.  Oh well, lesson learned.  At least it wasn't a total loss.

Vortex worked great though.  Pellets burned all the way through.

Well, unless theres a third (missing ) pic of it dripping down through the grates  :'(   :) I would have to agree with Mike. Most of it looks like it made it and I bet you can find a use for all of it....

No I think I caught right before the critical meltdown.  The one block of cheese on the middle-right just started a drip line.  Next time I'll know better not to place the tray directly under the cheese. 

I usually don't have to think about this with my Big Kahuna since the heat/smoke source is outside of the grill.  I did like how the Vortex performed though

You brought back some sad memories where it got way to hot to cold smoke cheese in my Big Red Box.  We all learn new lessons from time to time.

Any of the cheese that sweated or slightly melted should be used ASAP.  Otherwise it will most likely become grainy. 

P.S.  Don't ask me how I know!  ::)

Allow me to welcome you to the "Club of the Majority"..... :D :D :D We have all done this...and probably much, much worse ;) What makes a good cook - is learning what NOT to repeat.That requires experience - and...well, there you have a good cook ;)
