Chicken Stir Fry on the Blackstone Griddle

I picked up a 22" Blackstone Griddle from HSN just prior to Hurricane Irma. This is the 2nd
time I have used it. This is the first actual griddle that I have owned. It is awesome to cook
on. I just need to figure out temperature control on it. It is a 2 burner and puts out plenty of
heat. When I preheated it tonight I checked it with my Maverick laser and it was showing 480
to 510 across the griddle. I did turn it down to medium high before I started cooking. I am
definitely a rookie with this so any advice from the Blackstone pros will be deeply appreciated.
My wife loves this thing and she did most of the cooking tonight with me assisting.

Thanks guys. Do you cook high temp all the time? That is what I am trying to figure out. I know if I want to keep something warm I can just turn the one side off. But this thing being so small the heat radiates across it from 1 burner on. This is the perfect size for me and my wife, BUT.. I am already dropping "hints" about getting the 36".  8)

I have the 28" & I very seldom have mine on high.
Usually on about 3/4 to heat up then turn down some to cook.
Once it gets hot it stays hot even when turned down on low.
Play with it & you will get it the way you like to cook. :)

I learned early on my 36 that high heat is only good for burgers and steak. It was just too hot for most things. I picked up a 17 on clearance. Do you have a link for the hose you bought for the big tank?

Also, I actually prefer using a stiff putty knife for cooking. I feel like I have better control. It is the same knife I use to scrape the grill when I am done. They are fun to cook on
