1st Brisket

Hello All,
Had day off yesterday -- decided to try my 1st brisket.

Rubbed it with Dog Day Spice rub (3 KnuckleHead)

Here it is after it reached 165


And then pulled it off PBC at 200 (PBC was fading fast)




Came out pretty well.

All comments are greatly appreciated.

That sure looks good - juicy and a nice smoke ring. Bet it made some good sandwiches!

Question: You stated that the PBC was fading fast. How big was the brisket and how long was it on the PBC?

Thank you all for the nice comments.
@Chief Mac, I think it was around a 6# flat.

I put it on 2 9:00 AM and took it off when it hit 200 at about 4:30 or so.

I had the lid cracked but could not get PBC above say 210 or so.

One of the best purchases I have made (since PBC) was the Thermoworks Dot thermometer.  I go the probe I can leave in the pit and one in the meat and then just plug in one or the other.  Very handy.
