What do you do with the last of the holiday leftovers --make Gus' leftover stew.
I started out getting all the leftover brisket, beef ribs, and a porterhouse steak and I cut them into about 1 inch cubes. Gathered some spices, bacon, potatoes, carrots, peas, celery, onions, garlic, peppers, and some broth.

Put them in a dutch oven and into the oven at 250* for a few hours.

Looks great Gus.
If you have any of the stew leftover.....you could thicken it with toasted flour, arrow root powder or...?
And - put it in a pie crust and top it with same...and I think you would have a nice pot pie.

I don't think there will be any leftovers of Gus' leftover stew. Looks filling and comforting.

Thanks for the Idea, sir....
With temps in the low to mid 20's here in the sunny South this week, a hearty stew like that will be just the thing.
I have a brisket flat in the freezer (smoked) that I was going to make into burnt ends. I think I'll use it in a stew instead.

You are killing me with how you are using leftovers. I could use a big o'l bowl of that. :P

That looks fantastic. Would like a big bowl of that for lunch today - it is kinda cold here (Cold for Seattle that is)
