another newbie...

 8)  hello everybody ......wnc native.......and was asked to join this site by another BBQ lover.......i have done BBQ comps. for a year now and have done very well., some have called me a newbie or rookie until i get those top 5 walks.......love BBQ and cooking in general...and have been cookingBBQ since i was 15 years old.....in fact i would travel and cook BBQ every weekend if possible..........hope to read and learn something from this BBQ site........PIG OUT!!!!

Hi Bill,  glad to see you here on the forum.  I have joined a few comps in the last few year with CharBroils Bigh Easy's and SRG's as my only cookers and will soon (I hope) get enough parts to  build my DCBE's for comps.   Since gas is not allowed in some of the backyard comps I had to do infrare another way  8)  I hope to beat them at their own game.

Hey Bill,
Welcome.  We need more competition cooks here.  I am a KCBS Certified BBQ Judge and am always looking and learning from competition cooks.  I even took a competition class from Rod Gray a while back.  Boy did I learn a lot from that.  Enough so that I bought a pellet grill to cook on at home.

got a traeger075 but still like the old and slow cooking method......just bought a 60 LANG   and picked it up yesterday.......got a big fire going and smoking it up now.........

hey smoke,    i fired up that lang for the first time today and was impressed at how fast it came up to temp.and being able to control smoke and heat was spot on........i ran it up to 325 and then backed off and just let it smoke itself out........about one more good run thru and it will be just about right for cooking on.

Just post it in the Equipment  - under offset smokers, and I will bet there will be many drooled on keyboards!
