A quick intro, hello y'all

Hello all!
 I found this friendly forum while doing some research about the Pit Barrel Cooker I ordered. I live in the Houston, TX area and do a lot of cooking from Thai to Mediterranean, French to Italian and Spanish,...you name it. I like to experiment quiet a bit as well so no cooking method is off the table. I love a properly made bark heavy Central Texas brisket as much as I love a perfect steak cooked sous vide in my immersion circulator or nice lentil salad. It's all in the technique and quality ingredients. If it produces a good result, then I'm in to give it a shot. Until I ordered my PBC I had been using a cheap offset smoker (Chargriller) for the past 11 years. I modified it a bit, I'm used to it and it usually produces very good barbecue, but I want to explore other options alongside it without spending a ton of $$ (I have too many food and drink hobbies and the wife has to put her foot down now and then  :) ). I write about food, experiments and movies on my personal blog as well.

Looking forward to learning some more about the craft of bbq form the experts here.
