Hello everyone - Glad to be here to soak of some of yall's knowledge. I've been "grilling" my whole life on charcoal. Built my own UDS (with emphasis on UGLY) a few years back and recently added a GMG Jim Bowie into the mix. Being originally from Southern Louisiana, I like a have a crawfish boil here in NC when I get the chance.

I used to do a lot of hiking/backpacking down not too far from you in the Pisgah Natl. Forrest & Linville Gorge.  In fact my wife and I are heading that way in a couple days.
