Pork Loin Chops

These chops are about 1 3/4" thick.  OO, S&P, GP, and OP.  SV @145* for 8 hr.



Time for a quick sear, about 1' 30" /side in a VERY HOT CI skillet.







And with those good cracklins from the sear and those wonderful juices from the SV,  well........ you just have to make some GRAVY



With scalloped potatoes and fresh corn,  .... and of course a glass of wine.

These chops were veeery thick, like a roast...........
 and its hard to overcook with SV.

Does flavor, tenderness, etc... improve if you cook longer in SV? Just got mine and trying to learn as much as I can about them.
