Swamp Soup
« Reply #-1 on: January 05, 2018, 05:15:02 PM »
We went to a local restaurant one night while Christmas shopping and had their Swamp Soup. It was really good so I decided to make some for our new years meal ( and several since) . I got a little carried away with the amount I made!
If you like greens and peas this is something you need to try.

The amounts and types of ingredients can be altered. however. The greens should be the main ingredient for this version. A nice smokey flavor is real nice too so use smoked meats if you can.
I knew the basics so I just winged it.  Saute an onion and small bell pepper to start. Add a ham bone and a quart of chicken stock. (Water to cover if needed).  bring that to a boil.
Add some frozen peas  ( not to many ) they just need to be an accent. Bring back to a boil.
I added leftover smoked chicken, a few slices of prime rib, and 1/2 lb grilled conecuh sausage.
Let this simmer until the the peas are about ready. Add 1 small bag frozen mustard greens, one large bag frozen turnips with warm water to cover well. (Extra pot liquor is a plus).  Cover and let simmer a several hours.
Grill another 1/2 lb of Conecuh . Cut into short pieces and add this to soup as you serve or just before you serve.
Serve in large bowls with lots of pot liquor and a side of cornbread.
I may be crazy but I'm going to add fresh crab meat tonight because it just seems like a good thing to do...
 Happy New Year!

Terry, it looks delicious, but that is because I can't see the peas in the picture.  I would love the greens though. You're turning into quite the gourmand.
