There is a new recipe out there on many recipe and forum web sites for this great sounding treat.

It is a deep fried hot wing and the three pound recipe calls for an overnight buttermilk soak, a 1/2 cup of ground cayenne pepper as the first ingredient in the rub, and a sauce that starts with a 1/2 cup of lard.

Now, that probably doesn’t sound very good to a “normal” person but for me as a chili head it looked great and I couldn’t hardly wait to try it.

Anyway, I did this recipe and followed all the directions and this is what it looked like.







These came out looking great but were so hot that a fellow couldn’t really taste anything other than the cayenne heat and it was overbearing with heat. If a fellow wanted just pure heat, this would work. I think my smoked hot wing is better and don’t think I will be making any more of this recipe.

Having grown up in New Mexico, I love hot food, but not so hot that you cannot taste anything else.   I use some sort of chile powder in any or all of my rubs, plus with wings use either Frank's or Sriracha on them, but in moderation.    You might want to try again with not quite so much cayenne OR a milder chile powder, like chipotle, Anaheim or ?  Just a thought.

Way too hot for me..I like to taste all the flavors, not one dominate flavor like cayenne, or oregano, cilantro or rosemary or tarragon too. just saying.   .☆´¯`•.¸¸. ི♥ྀ.

I agree with wanting to taste all the flavors, not just a dominant flavor. I had a dish several years ago at a fundraiser for a local fire department.  It was a Mexican-style buffet and all you can eat. This was all very authentic Mexican food. I started with a generous serving of (can't remember the Mexican name) beef in the red. Basically cubed beef baked in hotsauce. Anyway I love hot food, but instantly I knew this was far beyond hot! My eyes watered, my nose ran, I got the hiccups, and I could not taste anything else i ate that night! ??? In fact the top of my head was in full sweat mode for hours!

Forgot to add, even tho this sounds hot Dave I'd still give them a whirl! :D

 Before I started reading and from the picture I thought you had deep fried some brownies... Which peaked my curiosity...   Even they couldn't handle that much pepper though.
Heck you could have just deep fried cayenne balls.
Are you sure you read that right Dave?  Better let Jan read it... ;D

I love hot chicken, sadly I'm addicted to Kentucky Fried Chicken's version they have out for a limited time. I haven't made my own yet but did come across the recipe on FoodNetwork for Hattie B's famous Nashville Hot chicken. This was the sauce recipe for that...

1/2 cup lard, melted and heated (or hot frying oil)
3 tablespoons cayenne pepper
1 tablespoon packed light brown sugar
Sea salt and freshly ground black pepper
1/2 teaspoon paprika
1/2 teaspoon garlic powder
