I've never spatchcocked a whole turkey but do it with bone-in turkey breasts.

At work we actually deconstruct the turkey separating the leg/thigh from the breast and cooking them independently. This Thanksgiving we're doing 12 birds.

Art, I spatch-cocked chickens for a few years
but after awhile I went back to just cutting the bird into halves, two pieces
it makes it much easier to handle during the cook
and it's how our granddads did it

... but it sure did taste good!!   8)  ... I love to spatchcock my poultry  ;D

I SPATCHCOCK a bird a couple weeks ago and after looking at it I went ahead and just cut it in half. Seasoned each side different.

it seems everytime i spatchcock a chicken the legs pieces fall off when i pick it up.  guess that means it done.  lol.....

I like spatchcocking because the bird cooks more evenly and I know the thigh meat is done......always been a little paranoid smoking poultry......

I think that Turkey looks fabulous!

Spatchcocking sure has my vote!  It's basically the only way I cook poultry anymore.

I remember the first time I spatchcocked a chicken, If I would have said "spatchcock " one more time that day I think my wife woulda done me in. Its such a fun word to say ;D
