Today I made a duck breast. Before cooking I brushed it thinly with a paste of honey, mustard, WOW, and balsamic vinegar. It was seared on high heat of about 360°F directly from both sides on the mini egg, then I added the plate setter and cooked it indirectly to an IT of 137°F. The duck breast looks darker on the pics than it actually was. Plated it as a starter sliced with cranberry relish and arugula salad.

No, duck doesn't taste like chicken at all. The taste is difficult to describe, it's very unique, but very good.

Just try it out. Don't go further than an IT of 140°F. Tastes great with an orange sauce or some sweet sides.

There's nothing like crisp skin duck.  My mother made it when I was young, and it was absolutely delicious - the best fowl of any kind I have ever eaten.  We'd pull off the skin, scrape the thick layer of fat, and eat the tastiest crisp skin of any bird in my opinion.

Your duck breast brought back great memories WC - thanks for posting.
