Kicked up Chicken Salad

So I get home from work today and I had some chicken breasts thawed in the fridge. I was kinda pressed for time ( damn kids) and didn't feel like eating plain old chicken breasts.. I find them really boring no matter what I do to them. After a little thinking I came up with this.
Seasoned with this..

And basted with this while grilling

Chicken done and chopped up



Mixed up with this



And plated on some nice fresh bread


I gotta say.. It was damn good!

You had me right there.  Deb came home with a huge bag of skoneless binless chicken breasts to stuff the freezer with.  Now there is no room for more butts and ribs till we can get rid of the chicken.  Problem is I find them really boring no matter what I do to them.
This looks like a great way to fix 'em up into something that actually tastes good.  I use the Mo Rockin' rub a lot and I have some in stock now.
Thanks for the recipe...I'll use it soonly.
