Thank you Smokeasaurus! I think the PBC's secret is the size of the drum and airflow. They nailed that thing.

Dayum!  What a revelation!

I don't know when I'll be able to able to pick up one of those cast iron grates, but, hanging sure does produce some good lookin' results ! ! !

I looked at the Weber hanging rack but it's a one trick pony. The grate allows me additional space for other food that can't hang.
