Fat cap up or down?

These are the questions that have haunted mankind since the beginning of........well at least since 1962  ;)

Good explanation!

I usually go fat side down, but for other reasons.  The main reason is that you can't really get a good bark on top of fat, so I go meat side up to get a better developed bark.
