Fresh trout

My amazing neighbors dropped by last night with six trout they caught this weekend while they were out kayaking.

James was out last night, and I'd planned on waiting to cook them up until he got home tonight.   HA!  That lasted about ten minutes before I was overcome by temptation and had to try one out.   

Split the little guy in half, browned some butter in the cast iron, and sprinkled with a little salt and pepper.  I usually leave the fins and tail on, since I love the crispy bits, but I got a little overzealous with the fillet knife so the dogs ended up with a little extra treat. 



I thought of you, Smokin' Don, and added just a LITTLE butter on top. :) ;D



The skin was crispy, meat was just melt in your mouth tender....  I might smoke the fish for a wee bit when I make them tonight for James.  YUMMMMMM!

Ohhhhh boy - that looks good! I know I live in Minnesota and am supposed to only eat walleye, but I love trout! Have my fly rods rigged for this weekend. Thanks for sharing.
