MAK Smoked Tri-Tip to Perfection

Smoked a USDA Prime Tri-Tip roast at 230ºF until the IT reached 145ºF ... Rubbed the Tri-Tip with EVOO and Pete's Western Rub -> Wrapped in plastic and fridged overnight -> Preheated MAK to 230ºF with Hickory. Took about 2 hours to come to temp -> Rested the smoked roast for 15 minutes under a loose foil tent before carving against the grain.

Served with a side of steamed cauliflower and a green bean casserole ... Yes, steamed cauliflower! Don't get me wrong - I LOVE mashed taters but now and then the cauliflower really hits the spot. Besides, if you're watching your carbs then it's a wonderful substitute.

Why 230°?. Why not smoke setting for 45 minutes then 275° until done?. Just wondering.  It's looks great.  Love cauliflower.

I bought 2 cryovac packages of USDA Prime peeled tri-tips from Costco a while back Sparky. That gave me 12 Tri-Tips. Have smoked/cooked them many ways ... smoke at 180ºF then bump to 350ºF till an IT of 145ºF, or smoked at 225ºF, or roasted at 350ºF, or a Trisket taken to 200ºF ... Many different combinations ... bottom line - they all turned out wonderful!

So I decided yesterday to just smoke it at 230ºF. No special reason ... just because. I cook one every 2 weeks or so. That was 9 of 12 - 3 to go  8)  8)

We took the RV from California to Rhode Island last Summer Tee to visit our oldest Son who just retired from the Navy after 21 years - so if we don't go to Alaska again in 2018 we'll probably take in the Southeast and work our way up the coast ... Can you wait that long? Hopefully I'll be traveling with the new MAK-Mini :D  ;)
