Chicago Style Deep Dish Pizza (low carb)

The other night I had a craving for some deep dish pizza, but I'm eating low-carb. What's a fella to do...?


First I made some low-carb Marinara Sauce: http://www.letstalkbbq.com/index.php?topic=19751.0

Then, after looking at a few low-carb pizza crust recipes/ideas, here's what I came up with. This is similar to a "Fat Head Low Carb Pizza Crust.":

Low Carb Pizza Crust
7 net carbs for the whole crust.

1/4 cup Shredded mozzarella cheese
1/2 cup Almond Flour
1 large Egg
1 TBSP Olive Oil.
large pinch Salt

Melt the cheese in a microwave for 20 - 30 seconds just until cheese is melted. Be careful not to overcook it or it won't mix in with the other ingredients!  Mix everything together with a fork until everything is well incorporated and a sticky dough has formed.  Use an oiled measuring cup to press the dough into a 8" cast iron (or pizza) pan. Prick holes in the base of the crust with a fork and pre-bake at 350° for 12 - 13 minutes or until just starting to brown.

Top how you like, and bake at 350° for an additional 20 - 30 minutes.





After pre-baking the crust, I layered in 1/2 cup Mozzarella, pepperoni, Italian sausage, a few mushrooms, and black olives, 1/2 cup of the sauce, then topped with a few more shreds of Mozzarella (no Parmesan for me), and a sprinkling of oregano.

 


Two slices and a nice salad was plenty!




With only 3.75g net carbs per slice (15g for the whole pizza) this recipe is a keeper!

Craving for real pizza - SATISFIED!  8)

Looks good Cliff..you can always steam some cauliflower and then process in the food processer..with a lil oil and gahhlick for the crust too..it takes on the flavor of the gahhlick..then just press into the pan..just sayin   .☆´¯`•.¸¸. ི♥ྀ.

Pam I actually considered that crust, and want to try it sometime.

I found this Fathead style crust here: https://www.ketoconnect.net/recipe/low-carb-pizza

I basically used olive oil instead of the bacon fat, omitted the oregano, and added a bit of salt.  I'm really happy with how it turned out.  The best way I can describe the flavor of this crust is, since there's mozzarella in the crust, it tastes like the outer edges of a regular crust that has a little cheese baked on.

I have another recipe I want to try, which is actually a low carb yeast dough and may be even better yet. I'll keep you posted.

Cliff...you can even use mozz for the crust also...get pan hot and spread it around and let it melt together..makes great crust...I have done it on cast iron griddle too...just add toppings...I make individual one that way.. might not be a deep dish but who cares..lol   .☆´¯`•.¸¸. ི♥ྀ.

That is fantastic!!!  Thank you so much for the marinara recipe too-- been blown away with store bought sauces and how much sugar is in so many of them!
