First Brisket on the RecTec

Bought a prime packer from Costco the other day. So I decided to cook it today. (was also trying to finish painting my deck -so it was an interesting afternoon.)
Had trimmed the brisket last night, also decided to separate the point and flat as I never cooked it that way before. Kind of massacred the point but all ended well.

This morning I took them out and added a rub of just pepper, salt and some gunpowder.


Here they are loaded ( the flat, the point split in two and part of the flat I accidentally sliced off- must pay more attention when slicing things : )  )


As expected the pieces were done at different times. As they came out of the stall I wrapped them in butcher paper and put them back in until they reached 205ish or were very tender. Except for the flat which was the biggest piece. I was running out of time so I pulled it early when it was about 195*. I'll try and finish it tomorrow, see if it works "re-cooking".

Anyway, here is the flat after the stall, spritzed with apple juice and ready to go back in.



Here is a finished piece sliced for sandwiches.



Here is the sandwich - was great.

Heck yeah!  Gus you like your brisket sandwiches the same way I do, with a little sauce and slaw on it.
