Greetings from upstate SC

Hi everybody,
Long time gas/charcoal griller but as my username suggests, I'm a complete novice in the world of smoking.  Just picked up a Pit Barrel Cooker a few weeks back and I've got a couple of cooks under my belt.  It's been a lot of fun so far but I definitely have a ton of experimenting/researching to do.  Chicken and pork butt came out really good for a first cook.  Swung for the fences with a brisket (since it's my favorite) on the second cook and the flavor turned out great but the flat came out too firm.  I'm hoping that over time I'll figure out how to nail the flavor and texture on the brisket. 

The forum threads I've read through so far have had a ton of great info on them so I'm looking forward to be able to help contribute going forward.  Also looking forward to trying out a lot of the other recipes I've seen on the forums.

Brisket is one of the hardest meats to master because it is a more massive cut, requires good knowledge of your cooker's capabilities, and knowledge of what you can do to it to insure success.  Here's my approach for you.  Sneak up on it.  The PBC can do a great brisket but since it works a little hotter than most smokers, you'll need to be aware of timing.  Another interesting thing about brisket is that no two ever cook exactly the same even if they are the same size.  Good brisket is mana from heaven though, so its worth all the trouble  ::)
