Rack of Lamb
« Reply #-1 on: November 21, 2017, 09:41:36 PM »
The wife is in Los Angeles helping her mother, so I am a bachelor for Thanksgiving. Since we had our turkey day before she left, I was going to make lamb chops on this Thursday. I bought a package of frenched chops to make a crown roast.  But they looked so good, I made them this Saturday.
First I rubbed the rack with some olive oil, and a thyme, rosemary, garlic paste.

Here they are tied into a "crown" and into the RecTc. Looks bare since I was supposed to use two racks but since there was only me, I didn't want to cook that many.

All done and plated with some roasted potatoes and grilled asparagus. Very good meal, now I have to figure out something different for Thanksgiving.

Why couldn't Noah have swatted the 2 mosquitoes?.
