Happy 4th of July!
 
The 4th of July is a time where families get together to create new memories and enjoy great food.

A-MAZE-N BBQ RUB
1 Cup - Brown Sugar
1/2 - Cup Paprika
2 TBS-  Kosher Salt
1 TBS - Coarse Black Pepper
1 1/2 TBS - Garlic Powder
1 TBS - Onion Powder
1/2 TBS - Chili Powder
1/2 TBS - Cumin
1 tsp - Dry Mustard
1 tsp - Allspice
1 tsp - Ginger
 
OPTIONAL: -
1/2 tsp - Cayene Pepper(Hot)
               or
1/2 tsp - Crushed Red Pepper

 
A-MAZE-N BBQ Sauce
1 Cup - Ketchup
1/2 Cup - Apple Juice
2 TBS - Apple Cider Vinegar
1/4 tsp - Onion Powder
1/4 tsp - Garlic Powder
1/4 tsp - Crushed Red Pepper
2 tsp - Dry Mustard
2 TBS - Light Brown Sugar
2 TBS - Molasses
1/8 tsp - Liquid Smoke
2 TBS - Lemon Juice
2 TBS - Honey
 
Simmer for 30 Minutes on "Low"
Optional - Add: 1 Extra tsp Liquid Smoke
 
Bourbon Sauce
3/4 cup - bourbon
2/3 cup - brown sugar
1 - garlic clove, minced
1 tsp - apple cider vinegar
1 TBS - worcestershire sauce
1 TBS - honey
1/2 tsp - ground mustard
1 tsp - black pepper
1 TBS - lemon juice

Combine the bourbon, sugar, mustard, pepper, garlic, honey, vinegar and Worcestershire in a small saucepan and whisk. Heat over medium for 8-10 minutes. Reduce to a simmer and let simmer for 20-30 minutes, or until mixture reduces by about half. Pour mixture in a bowl and let sit at room temperature.
The glaze will thicken a bit at this time.

Timely post for me.

Is there a section on the Amazen site that has tips or techniques for using the Amazen products? For instance, what is the best way to use my Amazen Tube to do simple things like burgers or steaks?  I don't seem to be able to figure out the best way to give some smoke flavor with the quick cooking times burgers and steaks take. I am too afraid of bacteria growth of doing a cold smoke for a long time for these meats and then cranking up the heat for a quick sear.

What Dee said..I have an amazing 6" round tube for  cold and hot smoking and a smoking mesh one for anything. They fit in all my IR cookers and smoker for when ya want some smoke. Great products. Thanks for the recipes. Nice of you to share for the 4th.  Pam    .☆´¯`•.¸¸. ི♥ྀ.
