I made a tortellini pasta salad..it was spinach & ricotta tortellini. You can use any kind
1 lb. Tortellini Pasta (cooked & drained)
1 16 oz. can Black Olives, slice olives in half
1 small Onion, finely sliced
1 cup of Cherry or Grape Tomatoes, sliced in half
1/4 cup diced Peperoncini or Yellow Peppers
1/3 cup diced Salami
1/4 cup diced Pepperoni
Mix, refrigerate and serve cold.
I eliminated the salami and didn't have any pepperoncini..bought pepperoncini today to add to it. I added artichokes to mine to replace the pepperoncini.  You can add anything you want to this salad, just add what you like, cheese,  roasted red peppers, cukes, zucchini, whatever. Instead of a dressing, I used the brining juices together with a lil ACV and s&p...this cuts out tons of calories,  Enjoy.   .☆´¯`•.¸¸. ི♥ྀ.
