Chimney Method

I know that Noah recommends putting 25% of your coals in your chimney to get it started. The last brisket I smoked I thought the starting temp was too hot. If I were to only put about 15% or 20% of my coals in the chimney would that help prevent my staring temp from spiking too high? Or if I were hanging chicken (I have had great results hanging chicken breast) and put more than 25% of my coals in the basket would that increase my starting temp?

I think you are correct John. I also will take the two rebars out and put 3 wine corks in the holes and adjust as needed, keeping track of pit temp.

Yup, just start with less lit coals and that will work.
