all turned out great!!! chicken, ribs, duck, and brisket!  I have also done butts and a turkey for Thanksgiving, but no pics... Please also note that the beer in the duck pic was for medicinal purposes only!  :P

Duck on the PBC?  How did you do that?  Can you share the process of that, would love to save all that duck fat too, but probably would be hard to do.

clean up the skin around the neck, etc.. Rub little evoo on it, and put on a seasoning of our choice. Cook til 130 degrees then sauce it a bit with a huli huli sauce, then cook to 140.  Pull and let rest 20-30 min.  the high heat from the PBC renders the fat out, but not too much of it! great for holidays etc...The skin comes out crispy and duck fat crunchy.  I might also add that the wings were done as well.  I also chucked in a small handful of apple chips at the start..

Nice pics!....

Just a caution: We are ALL about the cook, the recipes and the stories----as much as the pictures.
Why? 2 reasons.

First - they give the pictures meaning and context - thus value..... They create the discussion that we can all learn from and that is kinda why we are here huh? To share and learn.

Second - We have an agreement with our hosting service that we will not become a "photo dump". They do monitor sites from time to time to make sure the agreements are not being abused. We have received a warning from them in the past, so it has forced us to pay attention to this.

No harm, no foul - and I appreciate you jumping in and participating - so I do not want you or anyone feeling that this is a "chastisement" - it is NOT. Just a reminder for all of us to Post pics - and tell us a bit of the story to keep it interesting, and keep  our hosting folks happy. ;) 8)
