Some of my past PBC cooks...
« Reply #-1 on: January 28, 2016, 07:56:40 AM »
Since I'm new, I figured I would post some of my past Pit Barrel cooks with you guys...  I will admit, I have a hard time remembering to take pictures AFTER the cook is done, but I'll try to get better at that.  I'm just too hungry afterwards to pick up a camera!

My first chicken and first ever cook on the PBC.  It was a touch too smoky, but very tender and very tasty...

Probably my best and most popular cook on the Barrel yet.  My family is Greek and we often enjoyed lamb through the years, so I figured why not on the PBC..  This was a 5lb Bone in leg of lamb.  Rubbed with rosemary, oregano, thyme, salt, and pepper.  Then pierced and stuffed with whole garlic cloves.  Served with Roast rosemary potatoes, green beans and Greek salad.  It really was phenomenal.

Man, it was so good...  As long as you watch the temp and don't let it get past Medium rare, you really cant go wrong.  All I had for smoke was apple chunks and I didnt think that would go well, so i just used charcoal and it was fantastic.
