What if I used a couple bricks and went with a second grate...  Think that would work?  Or would the top layer suffer a less crisp skin?

Maybe more testing needs to happen next weekend!  Will need to invite more friends to make them disappear.

Thoughts?

Yes... Sometimes I use fluid.  Sometimes I use a starter chimney.  Not a difference either way.
