Title: Christmas Prime Rib and leftovers

Cooked our prime rib on the pellet grill for Christmas dinner.  It was 6.78 pounds. Started at 180 degrees then finished at 225. Took it off when IT hit 133 degrees. I let it rest for 20 mins and then seared on the Weber Summit.  Total cook time was right at 4 hours. Cooked perfectly and I betcha those French dip sammies are going to be good.

I missed this post earlier.  Saw it today and had to say THAT IS A BEAUTIFUL PRIME RIB Looks perfect to me. :thumbup:
