1st Pork Butt on my new Camp Chef DLX

Decided to try some pulled pork today. Set the DLX to low smoke and prepped the Butt.



Scored the fat cap rubbed it down with CYM and a homemade rub.





After 2 hours on low smoke mode. IT sitting at 95. Grill held an average temp around 170.

Cranked it up to Hi smoke mode. More later

Took it to IT of 154 and double wrapped in foil and bumped the temp up to 275.
Took it off when IT reached 201 and it was probe tender. FTC for 2 hours.



Looks good. I'm pretty happy with the bark.



Bone pulled out easily



Pulled. Nice and moist.
 
Total cook time 8 hrs 34 min. using pecan pellets. The wife and grand kids thought it was one of my better butts. It had way more smoke than any of the ones I cooked on my previous pellet grill so I'm really happy with the Camp Chef. The only thing I will change next time is use hickory pellets to get even more intense smoke flavor.

Looks really good!

The 100% hickory pellets will give you more flavor - and/or you might want to augment your smoke with an Amazen Tube Smoker ....it really does gov you an advantage as far as smoke profile.

I cooked a whole roasting chicken @ 350F - but had the Amazen Tube going as well - the chicken had a nice smoke flavor. Not over powering, but a nice "presence".
