I decided to make a fatty today. And when I was at the store I thought "this might be interesting" as I stared at the cactus pad. So I took 2lbs of sausage and flattened it out. It was then coated in Pinch of Sizzle Kansas City Rub. I placed the skinned cactus pad on the sausage. Seasoned with a little more rub and then I added diced sweet onion, green onion, orange bell pepper, and triple cheddar cheese. Then I rolled it up and seasoned with rub some more. Lastly a 2lb bacon weave :o

The traeger was loaded with Bear Mountain Maple Pellets and then I ran "smoke" on the thermostat for an hour then bumped up the temp to 250F until a IT of 170F ;D

Nice innovative use of nopale muebe!  it is not easy for me to find them here - but I at nople and nopalitos as a kid, and will start looking for them now that we have an abundance of Latino markets in the area.

Greg - I can only describe theri taste as something like a green bean that has been blanched. I love them when they are sliced up thin(nopalitos) and pickled then used as a topping for fajitas with some cilantro

muebe - if my memory is wrong please correct me here. And - can you get tunas? The "pear" or fruit of the prickly pear cactus?

Very carefully...... ;D

Actually - When I was a kid we would use heavy leather gloves and a long, thin very sharp knife and salad tongs to pick them - then use Brillo pads to scrape off the prickles running under water. Some detailing may be needed via knife.

So - if you can, just buy them pre-cleaned - do so - lots of work, and then treat them like any other vegatable, and wash them. I would still examine them thouroughly for any missed prickles tho ;)

I apologize for butting in, and again - muebe - please correct me on any errors I made here... after you have your coffee on the West Coast :)

In Southern California you can get cactus at most any store(Large Hispanic Population).

As Tee said Pammie you gotta clean the pad very carefully although the thorns are already removed I trimmed the skin off carefully with a filet knife.

They also can be stuffed with cheese and made just like a chile relleno :)
