Breakfast For A Cold Morning

It was a nippy 18F when I got up this morning.  I had to work outside all day so a big, hot breakfast was in order. While rummaging through the refrigerator I found some sausage, and bacon. Hmm this was a good start, so I started browningthe meats, tossed in a chopped red onion, and a chopped red pepper. This was seasoned with a Tbs. Of Way Out West, a few chopped cloves of garlic ( or gahlic as Pam calls it!) some black pepper, added a cubed baked potato, and 'bout 6 baby bellas chopped.  Next in was 4 farm fresh eggs, and some diced Munster cheese. Mixed it up a bit, browned it and it was ready to serve. Topped it with some fresh chopped cilantro,  and served with buttered toast and cold-brewed Sumatran coffee. This sure warmed the soul! I was now ready for the cold and wind!   8)

Mike you have no idea how badly I wanted to crawl back into the warm bed. But that meal did keep me warm!  ;)

I'm thinking that is one of the better breakfast concoctions I've seen in a while.  One suggestion, though.  Next time you make it, add a side of biscuits and GRAVY  ::)
