I don't think i invented the wheel but.
did some pastrami last week . it was in a wet brine for two weeks .
I Rubbed it with my normal spices rub ,garlic powder ,black pepper , crushed coriander seeds . only this time i added Ground italian coffee beans to the mix .
smoked it at 210 f for 8 hours . it got a great flavor you can't taste the coffee , but there is another layer of flavor that you can't put your finger on it .it is my first time i us coffee on my pastrami rub but not the last time .

You may not have invented the wheel, in this case pastrami, but you definetly improved it.  Nice looking paztrami. ;)
