My first bacon in my GMG

This is my first bacon with a dry cure .
I used sugar ,salt, cure 1 and black pepper , parked it in the fridge for 7 days .
After 7 days washed it in cold water and left to dry over night in the fridge .
Hung the bacon ( ok not a bacon yet ) it in the smoker with apple wood in my cold smoker and cold smoke for 6 hours .
After 6 i smoked it at 200f for an hour (a Romanian friend told me that in the village they bring the bacon closer to the fire for the last hour or so )
Removed the bacon and removed the skin , left it to cool down and put in the fridge for 2 days . breakfast with bacon .
I think it is came out great , but next time i will not add heat .

Next time you are going to cure, then only cold smoke?

Looks very nice Ahron.  When I have done bacon I cold smoke for a couple of hours in my pellet grill and then set the temp to 165 until it reaches an internal
temp of 145 to 150.  I think going up to 200 degrees is a little hot but if you pull it at those temps it will work. I am by far no expert on homemade bacon and I am
sure that the experts will be along to comment.
